White Rabbit
Like the rabbit in Alice in Wonderland, I'm late, I'm late. Hasn't been a lot to write about lately. Here are some fun things....
Alabama White Sauce
Down in Alabama they have a BBQ sauce they call Alabama White Sauce. I heard about it on the Food Network. I found a simple recipe for it, made some and I've got to tell you it is a miracle food. I hope you'll try it because it will truly surprise you.
Here's the simple recipe (this is enough for 2-4 people)
1/2 cup real mayonnaise
2 tablespoons vinegar (preferably apple cider vinegar)
2 teaspoons lemon juice
black pepper to taste
I put all this in my small food processor, whip it up and you've never tasted better mayo or, actually, a better sauce.
I also like to add more goodies to help jazz it up...
Try all or any of these...
1 garlic clove (or about 1-2 teaspoons of already-chopped-in-a-jar garlic (hint...costco has a killer deal on this stuff - it's a huge jar of chopped garlic for $4.00)
paprika to taste
basil leaves to taste
1-2 tablespoons honey to sweeten it
chopped onion and bell pepper (my favorite extra ingredient)
Here's how I use Alabama white sauce...
1. Chicken patty sandwich
I buy frozen chicken patties at walmart, cook them in the skillet, slap the patty on a bun, slather on the AWS (Alabama White Sauce), top it with lettuce and tomato. As Andy Griffith would say...mmmmmmmmmmm Gooooooood !!!
2. Skillet fried (or baked) battered fish filets. I recommend you try the frozen Tilapia fillets from Hy-Vee. Cook the fish and slather on the AWS....nothing better.
3. Celery dip. AWS is awesome on celery.
4. Hamburger sauce...this is a delicious alternative to ketchup or mustard
5. Salad Dressing. It's the creamy consistency of Ranch but with a delicious tang.
My co-worker, Molly, just moved to Boseman, Montana (her husband is studying geological hydrology-water in the ground-and the university at Boseman is one of the foremost places for this study sent me the following recipe for french toast...sounds fantastic
French Toast Recipe:
Ingredients:
1 large baguette (good to buy it a day or two before using so it’s harder)
5 eggs
2 Cups Milk
½ tsp vanilla (or 1 if you really like the flavor!)
1 tbsp grated or minced orange
3 Tbsp orange juice
4 tsp sugar
Instructions:
~Slice baguette into around 20 pieces (around ¾ inch thick)
~beat eggs, milk, vanilla, orange, OJ and sugar together.
~pour half mixture into long pan and let the baguettes soak in mixture at least 8 minutes, then do the same for other side of bread and other half of mixture
~melt 1 tbsp butter/margarine on skillet over medium heat. Once butter is foamy, reduce to low heat and cook each slice 3-4 minutes each side. They turn out better if you can avoid stacking them once complete and keep warm.
I used a big rectangular skillet so was able to cook almost a third of them at a time so it went pretty fast
